Summer! It's a legendary time for sweets. Fresh fruits, ice cream, and sweet lemonade battle the heat. But where to begin? There are so many treats, and such little time. But with these tasty lemon concoctions, you'll never go hungry again.
Cookies:
1/2 cup butter
1 cup sugar
1 egg
1 1/2 teaspoon baking powder
1 teaspoon vanilla extract
1 1/2 cup flour
1 1/2 teaspoons lemon zest
Preheat your oven to 350 degrees. In an electric mixer, mix the butter and sugar until fluffy. Add and egg and lemon zest continue to mix. Adjust zest to taste. Once the egg is fully mixed, add the baking powder and extract. Now add the flour, about 1/4 cups at a time. Put small balls of dough onto the baking sheet and cook for about 15 minutes.
Icing:
1/6 cup butter
1/2 tsp lemon zest
1/6 cup lemon juice
2 cups powdered sugar
Put all ingredients into an electric mixer on low. once fully mixed, apply to cooled cookies with butter knife. Enjoy with tea or ice cream or just plain.
